Strawberry, Mint, Quinoa & Avocado Salad from Trois Fois par Jour

Ingrédients

Salad

200 mL (3/4 cup) quinoa
500 mL (2 cups) quartered strawberries
2 avocados, diced
125 mL (1/2 cup) chopped mint
125 mL (1/2 cup) coarsely chopped roasted pecans
Salt and pepper, to taste

Dressing

65 mL (1/4 cup) vegetable oil
65 mL (1/4 cup) diced strawberries
30 mL (2 tbsp.) cider vinegar
15 mL (1 tbsp.) honey
15 mL (1 tbsp.) Dijon mustard

Preparation

Cook quinoa according to package directions, drain and let cool.
Combine all salad ingredients in a bowl and set aside.
Using an immersion blender or food processor, puree all dressing ingredients and pour over salad. Enjoy.

Does not freeze.
