Ingrédients

Salad

  • 200 mL (3/4 cup) quinoa
  • 500 mL (2 cups) quartered strawberries
  • 2 avocados, diced
  • 125 mL (1/2 cup) chopped mint
  • 125 mL (1/2 cup) coarsely chopped roasted pecans
  • Salt and pepper, to taste

Dressing

Preparation

  1. Cook quinoa according to package directions, drain and let cool.
  2. Combine all salad ingredients in a bowl and set aside.
  3. Using an immersion blender or food processor, puree all dressing ingredients and pour over salad. Enjoy.
Does not freeze.
