Ingredients

  • 60 mL ¼ cup salted butter
  • 60 mL ¼ cup smooth peanut butter
  • 125 mL ½ cup sugar
  • 3–4 ripe bananas, peeled
  • 1 egg
  • 125 mL ½ cup plain yogurt
  • 310 mL 1 ¼ cup all-purpose flour
  • 5 mL 1 tsp. baking soda
  • 5 mL 1 tsp. baking powder
  • 30 mL 2 tbsp. millet
  • 30 mL 2 tbsp. chia seeds

Preparation

  1. Cream together butter, peanut butter and sugar.
  2. In a separate bowl, mash bananas with a fork or potato ricer.
  3. Add egg and plain yogurt to banana mixture and mix well.
  4. Add sugar and butter mixture and stir to combine.
  5. In a small bowl, combine flour, baking powder and baking soda. Gradually incorporate dry ingredients into wet ingredients.
  6. Add millet and chia seeds, combine, then divide into muffin cups. Top with extra seeds or chopped peanuts, if desired.
  7. Bake at 350 °F (175 °F) for about 30–35 minutes or until a toothpick inserted in the centre of a muffin comes out clean.
