Ingredients

  • 60 mL (¼ cup) honey
  • 1 bag mint tea
  • 1 L (4 cups) coarsely chopped seedless watermelon
  • 250 mL (1 cup) full-fat plain Greek yogourt
  • 60 mL (¼ cup) fresh whole mint leaves
  • 250 ml (1 cup) boiling water

Preparation

  1. In large heatproof bowl or jug, combine 1 cup (250 mL) boiling water, honey, and tea bag. Steep 5 minutes. Discard tea bag. Stir mixture to dissolve honey. Set aside.
  2. In blender, combine watermelon, yogurt, mint leaves, and tea mixture. Process on high until smooth. Pour mixture into ice pop moulds and freeze 4 hours, or overnight, until firm
